Minnesota Red Cow and Henhouse E. coli Outbreak [Update]

Updated November 25 with additional illnesses Burgers served at Hen House eatery in Minneapolis and multiple Twin Cities Red Cow locations are the source of an E. coli O157:H7 outbreak that has sickened at least 19 people and hospitalized two of them with hemolytic uremic syndrome (HUS), a life-threatening complication of some E. coli infections that casues kidney failure.

Hen House and Red Cow E. coli Outbreak

The people sickened in this outbreak said they ate burgers at the Minneapolis Henhouse Eatery location or a Red Cow location in Minneapolis (Uptown and North Loop), St. Paul, Wayzata, Edina, and Rochester, between October 31 and November 7. All of the restaurants received ground beef from the same supplier.

The patients, who range in age from 9 to 70 years old, developed symptoms of an E. coli infection including abdominal cramps and bloody diarrhea days after eating the tainted burgers.

Other Restaurants Likely Affected

The ground beef linked to this outbreak came from Wolverine Packing Company, a Detroit-based supplier of beef and other meat products from many farms and other wholesalers. On November 20, Wolverine issued a recall for 167,277 pounds of ground beef products distributed to restaurants nationwide, so people eating at restaurants other than Henhouse and Red Cow may have been affected.

Symptoms of an E. coli Infection and HUS

Symptoms of an E. coli infection usually develop within one to three days of exposure. They include abdominal cramps and diarrhea that can be bloody. About seven percent of E. coli patients develop (HUS).

Over-the-counter anti-diarrheal medications and antibiotics should not be given to patients with E. coli infections as they can increase the chance of developing HUS.

HUS symptoms usually set in about one week after E. coli symptoms and include:

  • Pale skin
  • Extreme fatigue, lethargy
  • Skin that easily bruises
  • Decreased urine output
  • Bloody diarrhea

Anyone with these symptoms should seek immediate medical care as HUS can be fatal. Treatment for HUS includes blood transfusions, dialysis, plasma exchange, and kidney transplants.
