Symptoms of Illness

Symptoms of a Salmonella infection, which usually develop within six to 72 hours of exposure, include nausea, fever, vomiting, and diarrhea that can be bloody.

Listeria symptoms often appear within 24 hours of exposure but can take as long as 70 days to develop. They include gastrointestinal symptoms followed by severe headache, high fever, stiff neck and other muscle aches, loss of balance, confusion, or convulsions. Among pregnant women, Listeria can cause miscarriage and stillbirth even if the expectant mother experiences only mild, flu-liek symptoms.
